Apple pie has to be one of the most homely deserts. One that brings families together all over the world.
Many a winter evening in my household was spent with my family sitting together around the tv, the fire crackling away beside us in the lounge room, apple pie with thick cream in bowls on our laps. The thought makes me feel all warm and fuzzy.
With winter on its way, I thought what better recipe to share what I think is the world’s best family apple pie recipe.
Ingredients
Pastry
450g Plain Flour
250g Unsalted Butter Diced
60g Icing Sugar
2 Eggs
A Pinch of Salt
Filling
1.2kg Green Apple
55g Brown Sugar
55g Castor Sugar
¼ Cup of Water
1 tsp Cinnamon
¼ tsp Nutmeg
Method
Pastry
In a large mixing bowl sift your flour and icing sugar. Add your diced butter and rub with your fingers until well combined into a fine crumb. Add your eggs and using a knife combine through the mixture.
Form your pastry into a ball and turn onto the bench. Kneed a little until smooth. Wrap with Gladwrap and refrigerate for 30 minutes.
This recipe makes enough pastry for a top and base. Once your pastry has chilled you can divide into two portions and roll out to about 5mm thick and line your pie tin.
Filling
Whilst your pastry is chilling you can go ahead and make your pie filling. Peel and slice your apples into 8 pieces.
In a saucepan combine all of your ingredients and place on the stove for approximately 5 minutes or until apples start to soften. (I totally overcooked my apples last time hehe oops)
Allow to cool completely before placing in your pie base and top with the remaining pastry and pop into a preheated oven for 45 minutes for 200 degrees Celcius.
Top with a bucket of cream and enjoy xx
